Ingredients 2 tbsp butter, softened 1 cup sugar 2 large eggs 1 1/2 tsp vanilla extract 1 cup unsweetened cocoa powder 1/4 cup dark chocolate chips 1/8 cup unsalted butter, melted 1/3 cup chocolate chips, softened, and crushed 1/16 tsp salt Instructions In a small saucepan over medium heat, melt the butter and sugar in a separate bowl.
Add the eggs and vanilla and whisk until foamy.
Whisk in the cocoa powder, chocolate chips and salt.
Add 1/6 cup of the melted butter mixture to the dry ingredients.
Stir until blended.
Slowly add the chocolate chips to the wet ingredients and whisk again.
Stir in the melted chocolate and whisk to combine.
Transfer to a piping bag and pipe 1-1/2″ circles around each cupcake.
Refrigerate for 15-20 minutes, then chill for 10 minutes.
When ready to serve, remove from the refrigerator and frost with a little melted chocolate.
Recipe Notes To make the mint chocolate Fudge, combine the powdered sugar and cocoa powder in a bowl.
