A chocolate cake recipe that’s easy to make at home with a little help from your partner.
The Matilda chocolate-caked cake is a quick and easy way to enjoy the soft sweetness of Matilda cakes while adding a sweet treat to any meal.
This recipe is perfect for a day when you want to have a few minutes of quiet time with your loved ones before dinner.
To make the chocolate cake you’ll need:1 box of vanilla pudding mix or other non-dairy pudding mix2 cups of flour, plus 1 tsp of salt2/3 cup cocoa powder1 cup unsweetened cocoa powder2 Tbsp unsweeten sugar2 Tbs.
melted butter, melted 3 Tbsp.
coconut oil1 cup milk, plus more for the mixer to whisk up the batter1/4 cup chopped nuts1 Tbsp cinnamon2 Tsp.
vanilla extractThe batter for this cake is made from the vanilla pudding mixture and can be made in a food processor, blender, or even a food mill, if you’re using a handheld blender.
Just keep in mind that the mixer is a little bit of a beast when it comes to blending out the mixture, so make sure to get a good one.
Once the batter has started to clump up into little balls and is starting to bubble, add the cocoa powder and the cocoa.
Whisk until smooth.
Add the sugar, cocoa, and melted butter and whisk until well combined.
Add more water if necessary to bring the mixture to a boil.
The batter should be thick enough to stick to a piping bag.
Pour the batter into a piping cup, or put a piping tip in it.
Pipe some of the batter on the outside of the cake and the rest in the middle of the cakes surface.
Add some chopped nuts and cinnamon if you’d like.
Let it set for about 10 minutes, then top with the remaining whipped cream.
Enjoy the soft chocolate cake and keep in your refrigerator or freezer for up to 2 days, or in the freezer for about a week.
